Generate image from mesh (inverse Image Sampler)

Is there a quick way to generate a heightmap/image from a mesh.
Basically the inverse of the Image Sampler: input mesh, output image.

For context, I used Image Sampler as a height map to generate a Mesh, baked it, made a bunch of edits to the baked geometry, and now want an updated heightmap/image of said editted mesh. Is there a quick way to do this?
