Nice work.  You may get improved performance if you minimize the Grasshopper window (and scale down your Rhino window too) since the serial connection is tied to the graphics pipeline... so the more it has to draw, the longer the latency between how fast it can send out a signal.  Also, you may want to look at using one of the Smoothing components (temporal or smoothing average) to get the motion a little less jerky.
