algorithmic modeling for Rhino

Is there any way of turning these lines in this mesh into 2d strips ?

Typically your mesh points can be easily divided into rows of equal length. Then you can rebuild curves from them, make surfaces and Unroll them in Rhino or Grasshopper. In this def Minimal surface plug-in and Generator plug-in are used.

Sorry, which curves are U0,U1,V0,V1 set suppose to be set to? I am unable to recreate it

U0-U1,V0-V1 are the two pairs of opposite curves. U0-U1 are the curves parallel to the x-axis and  V0-V1 are the lines parallel to the y-axis.
