subdivide surface with vertical and horizontal divisions

I would like to have any freeform surface subdivided into cells with varied size but with isocurves always being vertical and horizontal in XZ plane.

Below is how I vary the size of the grid cells. Could I now project a grid in XZ plane on top of it to keep the topology of the surface and grid size but have vertical divisions?
