Parametrize strips from surface

hi, I am looking for  definition to create ribbons/strips/single way weave , from surface. In A way that I could change the variation of the curving amplitude ( well actually to be able to change it in multiple ways).

I am exactly trying to reach something like in the images below.Thank you for your help. You would save me :)
