Panelization and analysis

I am trying to panelize a doubly curved surface and then analyze the panels for flatness. I tried to follow the method described in this book on page 130:

However, I am unable to create a mesh as expected. I would be grateful if anyone can point out what I am doing wrong.

I would also like to analyze each quad/panel created for flatness and then apply gradient color based on the deviation. What is the best method to achieve that?
