is there a switch component to switch between two options or bypass certain part of the workflow?

You can do it somehow with dispatch component, here is a simple example:

What do all the second options in the data dam component mean?

Data Dam was designed to delay data. However everything to the right of the Dam will become inactive. If you want to split data into one of two streams, I recommend using a Sift component to split it, have your two alternative streams, then put the data back together using Combine.
