Ok sorry I got it now. so what is the output a servo tilting up and down? are you having as many servos as the points in the surface?

Mmm. Maybe u are imagine it reversed. Points in physical world are changed through virtual. I move virtual and physical moves.

LOL I understand this - what It is not clear how are changing the z values in physical world...with a button? what device tells arduino to send this input to firefly etc..?

No sorry, maybe i explain bad. Imagine u are moving a single point. Z value change. this value is real time sent to Firefly. Firefly send it to Arduino. Arduino has been programmed to receive this information and send them to the stepper drivers (a little electronic board). this board tell to stepper how many step rotate inward or forward according to the new Z value. If u see any stepper control a point of surface through a nylon wire.

Yes i used an arduino board which talks with steppers through firefly.points moves, Firefly get values from grasshopper points, then send values to arduino which send data to any stepper driver.

Yeah I mean.. saw ur implementing an arduino board arent u? so what device is actually controlling the z coordinate?

I extract Z value from any point, points can be controlled as u want, u can change the points position by playing with rhino surface control points, or switch from a surface shape to another surface shape (as in video) or u can do an animation. So is up to you.
