algorithmic modeling for Rhino

I bought a couple of tins for a party but we ended up not opening one of them. How long will it stay fresh if the seal is still intact? Also, once I open it, how many days do I have to finish it before it goes bad? I don't want to waste such an expensive product.

Storage is definitely the most important part of owning high-end roe. You should check the caviar shelf life on the packaging, but generally, an unopened tin can last 4-6 weeks in the coldest part of your fridge. Once you break the seal, however, you really should finish it within 24 to 48 hours for the best taste. I usually buy smaller tins from Bester so I don't have to worry about leftovers. If you have some left, make sure to put the lid back on tightly and maybe even use some plastic wrap to keep the air out. Air is the biggest enemy of fresh roe and will make it go soft and lose its flavor very quickly.
