It's definitely not possible to create a single nurbs surface, as a meta-ball surface might have any number of gaps and might even be disjoint if the point sources are too far apart. In software, Meta-balls are typically represented as meshes or voxels. Making 3D meshes out of this is not that difficult, just a whole lot more typing.
