simple surface/quad mesh

I am trying to build a single surface and a quad mesh like the surfaces I am attaching.  As of right now the surfaces are trimmed from larger surfaces and then manually manipulated to get the form.  I need to get the mesh quads or single surface to move forward.  I would really appreciate any help.
