It's a very tight equilibrium between Material / gel density and viscosity. It takes less than 1 min to print those objects shows in the video and 10 mins to cure. This process can be easilly scaled up!!!

A very clever idea and the gel, being water-based is easy to wash off. Any hint as to what the composite material is? I assume it would have to be about the same specific gravity as the gel in order to remain stationary while suspended.
