Gradient Component undo query

It seems sometimes i can undo (ctrl+z) a change made to the position of gradient colors or the addition of a color. Other times my undo skips it and undoes what ever i did on the definition except the gradient component. Also, can there be a way to delete a color?

Delete colours by dragging them far away from the gradient.
